By Franz Scheurer
Take the culinary talent of Shannon Bennet and give me the freedom to match each course to a whisky of my choice and you have a recipe for a memorable night. Which we certainly had at the ‘Cocktail Evening with Franz Scheurer’ held at Café Vue on Friday, 23rd February 2007.
Shannon’s ‘finger food’ at Café Vue worked superbly, full of salty flavours at the beginning of the night, enhancing the appetite, slowly becoming more refined, a perfect progression of flavours and textures. Here’s the menu and whiskies:
SMOKED SURF CLAMS
Talisker 1991 – Distiller’s Edition
~
RABBIT & FOIR GRAS PIE
Nikka Pure Malt White
~
‘FISH AND CHIPS’
Snapper tartare flavoured with salty capers resting on crispy potato
Bruichladdich Infinity (Series 2)
~
CRISPY CHICKEN LEGS MARINATED IN WHISKY
Ardbeg Lord of the Isles
~
FLEUR DE SUREAU
Washed rind cheese, Alsace France
The Macallan Amber
~
DRAMBUIE TRIFLE
Penderyn Welsh Whisky
The superb wait staff explained each dish as it was served and Graham Wright from the Odd Whisky Coy in Adelaide and myself worked the tables explaining the whiskies and why they were chosen to match the food. Value for money was exceptional and a great night was had by all. I hope we’ll have the chance to do it again one day.
